Corn with Scallion Vegan Butter
Servings: 4 servings
Ingredients
  • 1/2 stick vegan butter
  • zest of 1 lime
  • 2 scallions sliced
  • 1/4 teaspoon sea salt
  • 4 ears corn
  • salt and pepper to taste
Instructions
  1. Boil the corn until tender, for about 4 minutes.

  2. In a small food processor (a small blender or immersion blender works as well) pulse the butter, the lime zest, scallions, and salt.

  3. Top the corn with the butter.
