Ingredients
  • 2 cups cooked quinoa
  • 2 cups parsley thinly chopped
  • 1/4 cup mint thinly chopped
  • 1 cup cherry tomatoes cut in half lengthwise
  • 1/4 cup red onion chopped
  • 1/4 cup toasted sunflower seeds
  • 1 teaspoon minced garlic
  • juice of 1 lemon
  • 2 tablespoons extra virgin olive oil
  • salt and pepper to taste
Instructions
  1. Mix all ingredients and season to taste. Serve with pita, hummus and baba ganouj.
