Ingredients
  • 1 grapefruit peeled and segmented
  • 2 oranges peeled and segmented
  • 1 cup pineapple cubed
  • 1/4 cup mint
  • 1 tablespoon maple syrup
  • 1 teaspoon ginger peeled and grated
  • 1/2 cup toasted coconut
Instructions
  1. Chop the grapefruit and oranges, reserving the juices. Transfer to a bowl and toss them with the chopped pineapple.

  2. Add maple syrup, shredded mint, and ginger. Stir to combine. Mix the juice with the pudding (or yogurt).

  3. Divide among 4 bowls, top with the fruit, toasted coconut, and more mint.
