Black Bean and Corn Salad
Servings: 4 servings
Ingredients
  • 2 cups black beans cooked
  • 1 avocado in cubes
  • 1 garlic mashed
  • 1/4 cup red onion diced
  • 1/4 cup corn
  • 1/2 cup cherry tomatoes cut in half
  • 1/2 cup cilantro chopped
  • 2 scallions thinly sliced
  • 1 tbsp ground cumin
  • juice of 1-2 limes
  • extra virgin olive oil to taste
  • salt and pepper
  • a dash of hot sauce
Instructions
  1. Mix all the ingredients and serve! And go crazy with other versions of this salad. You can add cucumbers, bell peppers, and even pineapple!
