  • 1 teaspoon coconut oil
  • 1/4 cup shredded coconut
  • salt and red pepper to taste
  • 3 cups cooked brown rice
  • 1/2 cup peas fresh or frozen
  • 1/4 cup coconut water
  • handful cilantro

  1. In a saucepan over medium heat, add the coconut oil, add the shredded coconut, red pepper flakes, and salt and toast, stirring, for about 3 minutes.
  2. Stir in the brown rice, peas, and coconut water. Cover, reduce the heat and cook, stirring occasionally until heated through. Stir in chopped cilantro to taste.
