Ingredients
  • 2 tablespoons extra virgin olive oil
  • 2 bell peppers sliced
  • 1/2 to 1 serrano chile pepper
  • 2 carrots julienned
  • 2 garlic cloves smashed
  • 6 heads bok choy chopped
  • 1 tablespoon rice vinegar
  • a few basil leaves thorn
Instructions
  1. Heat the olive oil in a large skillet over medium-high heat. Add the bell peppers, serrano chile, and garlic and cook, stirring, until the peppers are lightly browned, 6 to 8 minutes. Add the bok choy and carrots, and cook until tender, 5 to 7 minutes. Stir in the vinegar.
  2. Remove from the heat, stir in the torn basil and season with salt.
