Vegan Chocolate and Peanut Butter Mousse

Ingredients

12 or 18 oz silken tofu

smooth peanut butter
1/3
cup
confectioner's sugar
I used Swerve
4
tablespoons
chopped roasted peanuts
4
tablespoons
shaved vegan dark chocolate
vegan whip cream
optional
Instructions
Using a blender or food processor, puree all ingredients until smooth.
Divide among 4 glasses, cover with plastic wrap and refrigerate until set, at least 30 minutes.
Top with chopped peanuts, whip cream, and shaved chocolate.
