Asian Quinoa Salad
Ingredients

cooked quinoa

frozen or fresh edamame
thawed if frozen

sheets dried nori
shredded or cut into thin strips

kelp
soaked in cold water for a few minutes and drained

scallions
thinly sliced

avocado
cubed

garlic clove
grated (optional)

soy sauce

cup
toasted sesame oil
a pinch red pepper flakes

Instructions
Mix all ingredients together. Adjust the amount of soy sauce to taste. Enjoy!
