Vegan Paleo Chai Granola
Servings: 4 cups
Ingredients
  • 2 tablespoons Chai spice mix
  • 2 cups cashews chopped
  • 2 cups pepitas
  • 1 cup sunflower seeds
  • 1 1/2 cups dried apricots chopped
  • 1/2 cup sesame seeds
  • 1/4 cup maple syrup
  • 1/2 cup coconut chips
Instructions
  1. Mix all the ingredients well and spread on a baking sheet lined with parchment paper. Bake it on 350° F, stirring every 5 minutes or so, until golden brown or longer if you want your granola crispy and crunchy — the amount of time it takes to bake it'll depend on your oven and your personal preference.
