Vegan Chocolate and Peanut Butter Mousse

Ingredients
  • 1 block 12 or 18 oz silken tofu
  • 1/3 cup smooth peanut butter
  • 1/3 cup confectioner's sugar I used Swerve
  • 4 tablespoons chopped roasted peanuts
  • 4 tablespoons shaved vegan dark chocolate
  • vegan whip cream optional
Instructions
  1. Using a blender or food processor, puree all ingredients until smooth.
  2. Divide among 4 glasses, cover with plastic wrap and refrigerate until set, at least 30 minutes.
  3. Top with chopped peanuts, whip cream, and shaved chocolate.
