Vegan Lentil Burgers
These vegan lentil burger patties are perfect! They make a great light dinner. I don’t use burger buns, as it is perfectly delicious on its own. Instead of the buns try to use iceberg lettuce or pitta bread.
Vegan Lentil Burgers
Ingredients
3 cups of water
2 cups lentils
1 medium onion, chopped 1 cup carrots, chopped 1 cup red bell pepper, chopped 1 cup green bell pepper, chopped 1 tablespoon olive oil
2 cloves garlic, minced
1 tsp chili flakes 1 tbsp chili powder 1/4 cup rolled oats
Instructions
1. Boil water.
2. Add lentils, reduce heat to simmer and cook uncovered for 30 minutes until lentils become soft and lose their shape.
3. While lentils are cooking, sautée onion and garlic in olive oil for 10 minutes.
4. Add garlic and continue sautéing another 5 minutes. Add the other vegetables and sautée for another 5 minutes.
5. Remove from heat and set aside. Add rolled oats and cooked lentils, and let it cool before forming the patties. You can process part of it to make it more compact, but it is not necessary. The rolled oats are great for binding.
8. Form into patties, 4 inches in diameter and ¾-inch thick.
9. Place patties on a lightly oiled cast iron pan and cook until brown.
