Vegan Farro and Pears Salad
This vegan pear farro salad is divine! Farro is one of my favorite grains; it is hardy and perfect for salads, served warm as a side dish, or a pilaf. I made this recipe from the Food Network Magazine as a warm side dish as well, and it was delicious, with great texture and flavor.
Vegan Pear Farro Salad
Ingredients
- 2 cups cooked farro
- 1/2 cup parsley, chopped
- 2 pears, chopped
- 2 celery stalks, thinly sliced
- 1/2 cup toasted walnuts, roughly chopped
- 2 scallions, chopped
- 1/2 cup toasted walnuts, roughly chopped
- 2 tablespoons extra virgin olive oil
- 3 tablespoons apple cider vinegar
- salt and pepper to taste
Instructions
Toss all ingredients together and season with salt and pepper to taste. Enjoy!
