Coconut Brown Rice with Peas
This vegan coconut and peas brown rice is such a delicious side dish! Who knew this combination would work so well together! At this point, I truly believe that anything with the name “coconut” in it, including my dog, is delicious!
Ingredients
- 1 teaspoon coconut oil
- 1/4 cup shredded coconut
- salt and red pepper to taste
- 3 cups cooked brown rice
- 1/2 cup peas (fresh or frozen)
- 1/4 cup coconut water handful cilantro
Instructions
- In a saucepan over medium heat, add the coconut oil, add the shredded coconut, red pepper flakes, and salt and toast, stirring, for about 3 minutes.
- Stir in the brown rice, peas, and coconut water. Cover, reduce the heat and cook, stirring occasionally until heated through. Stir in chopped cilantro to taste.
