Healthy Vegan Chocolate Fudge

You will love this healthy vegan chocolate fudge! It is delicious, healthy, and requires no cooking!
I always keep a batch in the freezer because this is a great pre or post workout snack. It is almost like an energy bar! It has the right amount of calories coming from the maple syrup and healthy fats from the coconut oil and peanut butter, so a little bit goes a long way!
Keep in the freezer as it will melt. And if you have a sugar tooth as I do, hide it all the way in the back!

Healthy Vegan Chocolate Fudge

For this recipe, I used peanut butter, but you can make it with any other seed or nut butter. Almond and cashew butter are great!

There are many ways to enjoy this delightful vegan fudge. Try it on top of ice cream, adding to your oatmeal, topping a chocolate mousse, or pie. I even put it on top of waffles or pancakes! It melts right away and adds this creamy chocolatey flavor.

Another thing I often do is to add nuts or rice crisps to the recipe before it goes in the freezer. There are many options for add-ons, and I am sure all of them will work amazingly!

Ingredients

Makes 40 small bites

  • ½ cup unsweetened cocoa powder
  • ⅓ cup smooth sunflower seed butter or peanut butter (with salt)
  • ⅓ cup coconut palm sugar or granulated sugar
  • ½ cup softened coconut oil
  • 2 tablespoons maple syrup
  • 2 tablespoons coconut flour or powdered peanut butter
  • ½ teaspoon pure vanilla extract
  • -Ground pink Himalayan sea salt, for sprinkling

Instructions

  1. Line an 8×5-inch container with parchment paper.
  2. Place all ingredients except for pink Himalayan sea salt in a small food processor or blender and process until completely smooth. Pour mixture into the prepared container. Refrigerate or freeze until firm.
  3. Cut fudge into small squares. For a Valentine’s Day theme, use a small heart-shaped cookie cutter. Top with a sprinkle of Himalayan sea salt.
