Black Bean and Corn Salad
My favorite vegan black bean and corn salad recipe! This salad recipe is a keeper. So delicious, easy to make and versatile. You can add any vegetable and it will always taste good! This is my basic version. I often add shredded carrots and zucchini, sometimes baby arugula. It is the kind of salad that has it all, and it is a complete meal.
The beautiful thing about this colorful salad is not just a delicious flavor. It is incredibly versatile and easy to make! You can change the black beans for kidney or garbanzo beans. If you want even more protein you can add some cooked quinoa or farro, or any other grain you like.

Black Bean and Corn Salad
Ingredients
- 2 cups black beans cooked
- 1 avocado in cubes
- 1 garlic mashed
- 1/4 cup red onion diced
- 1/4 cup corn
- 1/2 cup cherry tomatoes cut in half
- 1/2 cup cilantro chopped
- 2 scallions thinly sliced
- 1 tbsp ground cumin
- juice of 1-2 limes
- extra virgin olive oil to taste
- salt and pepper
- a dash of hot sauce
