This delicious side dish is so easy to make and full of flavor. I love to have it with rice and baked tofu or tempeh; also by adding some cooked quinoa and a citrus vinaigrette, it makes a beautiful quinoa salad!

Bok Choy with Peppers Recipe
Ingredients
- 2 tablespoons extra virgin olive oil
- 2 bell peppers, sliced
- 1/2 to 1 serrano chile pepper
- 2 carrots, julienned
- 2 garlic cloves, smashed
- 6 heads bok choy, chopped
- 1 tablespoon rice vinegar
- a few basil leaves, thorn
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the bell peppers, serrano chile, and garlic and cook, stirring, until the peppers are lightly browned, 6 to 8 minutes.
- Add the bok choy and carrots, and cook until tender, 5 to 7 minutes. Stir in the vinegar. Remove from the heat, stir in the torn basil and season with salt.
