Homemade Vegan Spiced Granola
I love how easy and fun it is to make this vegan homemade spiced granola. Every time I make a new batch, it is different in some way: the amount of sweetness, the spices blend… The problem is that sometimes I come up with a remarkable combination of spices and mixed nuts and dried fruits, but don’t take note of the ingredients and can’t figure out how to replicate it, but this time I was committed to listing all the ingredients! And I’m so glad I did because the way the elements combined was divine!
Homemade Vegan Spiced Granola
Cinnamon, allspice, nutmeg, and clove give this granola an Autumn feel. I can’t wait to use it in my apple crumble and pies! Right now I am sprinkling it on ice cream, adding to my oatmeal, or just having spoonfuls of it by itself.
There are so many ways to enjoy this delicious granola, and lately, I have been thinking of adding it to ice cream cookies, or an ice cream cake. If a simple granola recipe got me this excited, you must give it a try!
And note that this recipe is vegan, gluten-free, uses natural sugar alternative and has a pretty good amount of protein!
This recipe makes about 4 to 5 cups of granola
Ingredients
- 3 cups rolled oats
- 1 cup each, chopped: almonds, walnuts, and cashews
- 1 cup shredded coconut
- 1/2 cup pepitas (pumpkin seeds)
- 1/2 cup raisins
- 1/3 cup sunflower seeds
- 1/2 cup coconut sugar (or any other non processed sugar such as Sucanat)
- 1 teaspoon cinnamon
- 1 teaspoon freshly ground allspice (if not available, store ground works)
- 1/2 teaspoon ground clove
- 1/4 cup coconut oil
- 1/3 cup maple syrup
Instructions
Preheat the oven to 350°. Combine all ingredients and spread evenly on a baking sheet and stir every 5 minutes, until the oats are golden brown. It will take about 25 to 35 minutes. Let it cool and store in an airtight container for up to a month. Enjoy!
