Green Chickpea Hummus
What a lovely way to start 2018! Chickpeas are in season in late Autumn so I wasn’t looking or expecting to find them in January; but here they were, in a little local market in Hell’s Kitchen. It is so rare, so hard, so impossible to find fresh chickpeas in the supermarkets! I bought about 2 pounds, but after removing the beans from the shell I ended with less than expected. Next time I will buy 5 pounds!
There are many ways to cook green garbanzo beans. Because they are so fresh and tasty I love adding them to salads. The great thing about eating fresh chickpeas is that they cook in about 15 to 20 minutes, without the need to soak them overnight or using a pressure cooker. And they are so creamy! I decided to make hummus with them, first because I love hummus; second, to see if the green hummus would taste any different… and it does! It is impossible to describe why, but all I can say is that it has a milder flavor and buttery texture.
You will have to make this recipe with fresh chickpeas to find out for yourself! Next year I will definitely look for fresh garbanzo beans everywhere!
Green Chickpea Hummus
Ingredients
- 2 cups chickpeas
- 1/3 cup chickpea cooking water
- 3 tablespoons tahini
- 3 cloves garlic ( I love garlic! This is a garlicky recipe! Use less if not a garlic person)
- 1/2 teaspoon sea salt
- 2 tablespoons fresh lemon juice
- 1/8 teaspoon cumin
- 1/8 teaspoon cayenne (optional)
Instructions
- Combine all ingredients in a food processor or blender. It is easier to do it in several, smaller batches.
- Once blended, stir in a mixing bowl and taste.
- Add more seasonings if desired.
- Spread on a serving platter and sprinkle paprika or chili powder and a little olive oil over the whole plate.
