Raw-Vegan Peanut Butter and Chocolate Energy Bites

This is one of those recipes you go back to over and over again. I have made these energy balls for years! I love to take them to the beach, or having a couple of them before working out. They are very filling, and I delicious! I make them small, but I have made them into bars, and it held pretty well. The amount of water you use is just enough to bind the dry ingredients together. Try to have a dough that is a bit dry as the oats will hold everything in place really well.

Ingredients

(all measurements are approximate; experiment to your own tastes)    

  • 2 cups ground rolled oats
  • 3 tbsp ground flax seeds
  • 2-4 tbsp raw cacao powder
  • 2-3 tbsp maple syrup
  • 4-5 tbsp peanut butter or other nut butter
  • 1-2 tbsp olive oil (optional)
  • 1 tbsp water
  • Pinch of sea salt

Instructions  

  1. Grind flax seeds then rolled oats and pour into a mixing bowl. I like to include some unground rolled oats in this recipe as well. Add cacao powder and salt.
  2. Mix in wet ingredients (raw honey, peanut butter, olive oil, and water) gradually, until you are able to roll the dough until balls. Experiment with the quantity of each ingredient to your own tastes-feel free to taste the dough as you add ingredients. The olive oil is to add extra fat so it slows the absorption of the sugar in the honey into your bloodstream (so you don’t get a sugar high and then crash).
  3. The water is added if needed to give the dough more wetness, and the sea salt is not added as a flavoring in itself, but to enhance all the other flavors going on. Store finished balls in the fridge.
