I was at Fairway the other day, buying some rolled oats on their bulk section and saw this vegan paleo chai granola. It was so colorful I had to buy some to try. I love granolas, trail mixes, and granola bars. These snacks are packed with energy, protein, and are so much healthier than the commercial brands. The best thing is how fast and easy it is to make them!
The possibilities are endless. One recipe can be changed and adapted in so many ways, there’s no way you can get bored. But in order to keep this granola Paleo, do not use anything refined. Even the dried fruit should not contain sulfites. Once you discover all the many ways you can enjoy your homemade granola you are hooked!

If you want a great snack that is packed with protein, fiber, and energy, this granola is the one. I add it to my oatmeal in the morning, top it on ice cream and smoothie bowls, and even sprinkle on top of my salad.
This granola can be addictive! I love the fact that it is a clean, healthy, and sugar-free snack, but it is high in fat so be aware of how much you are eating. Having about a cup before my workout is a great pre workout snack that gives me lots of energy without making me feel full and uncomfortable.

Ingredients
- 2 tablespoons Chai spice mix
- 2 cups cashews chopped
- 2 cups pepitas
- 1 cup sunflower seeds
- 1 1/2 cups dried apricots chopped
- 1/2 cup sesame seeds
- 1/4 cup maple syrup
- 1/2 cup coconut chips
