This is a simple coconut fruit salad with vegan vanilla pudding makes a delicious dessert that is perfect for any occasion.
There are a lot of different flavors and textures in this dessert, and they all enhance each other. The mint, citrus grapefruit and oranges add a surprising contrast to the sweet vanilla pudding and coconut. I found this recipe in an old Food Network Magazine, and did some adjustments to make it vegan.
Making this Simple Coconut Fruit Salad with Vegan Vanilla Pudding
The recipe doesn’t mention what kind of pudding to use. Most supermarkets carry many different flavors of pudding, and most of them are vegan.
Vegan vanilla yogurt, or an overnight chia pudding are great substitutes for the pudding.
Here is a quick recipe to make your own vanilla pudding at home:
Ingredients:
- 2 cups plant-based milk
- 3 tablespoons sweetener of choice
- 2 tablespoons cornstarch
- 1 tablespoon vanilla extract
Combine all ingredients in a small saucepan over low-medium heat.
Stir until the mixture is thick and bubbly. Let it cool and transfer to a airtight container. Store in the fridge up to 3 days.
Simple Coconut Fruit Salad with Vegan Vanilla Pudding
Ingredients
- 1 grapefruit peeled and segmented
- 2 oranges peeled and segmented
- 1 cup pineapple cubed
- 1/4 cup mint
- 1 tablespoon maple syrup
- 1 teaspoon ginger peeled and grated
- 1/2 cup toasted coconut
Instructions

Chop the grapefruit and oranges, reserving the juices. Transfer to a bowl and toss them with the chopped pineapple.

Add maple syrup, shredded mint, and ginger. Stir to combine. Mix the juice with the pudding (or yogurt).

Divide among 4 bowls, top with the fruit, toasted coconut, and more mint.
